In keeping with my goal to eat more fruits and vegetables I stumbled across a picture on Pinterest for cucumber sandwiches. The link was blocked due to inappropriate material, however, I got the gist and came up with my own cucumber sandwich.
Makes 4 sandwiches (Equal to one regular sized sandwich on bread)
1 medium cucumber, cut into 8 slices
1 slice ham or turkey lunch meat
1-2 slice(s) mozzarella cheese
Cooked pieces of chicken
Salt to taste
Lay out your cucumber slices and salt them lightly. Place chicken pieces on four cucumber slices. (I used leftover Lemon Garlic chicken from dinner the night before.) Put small slices of cheese on top of chicken. Cut lunch meat into fourths and place one fourth on each slice of cheese. Top with the remaining four cucumber slices. Enjoy!
These are tasty, healthy, and surprisingly filling. Think of all of the variations you could try!
