Pumpkin Quesadillas

Halloween is such a fun time.  You can be so creative decorating, figuring out what costume you want to wear, and making fun Halloween food.  This week I decided to make a new Halloween treat/meal/dessert every day this week.

Tuesday I made some of these Pumpkin Quesadillas I found on Pinterest.  They looked super cute and super easy.

I took my tortillas and cut out the jack o' lanterns.  Then I fried the jack o' lantern face in extra virgin olive oil in a non-stick skillet.  After that I put cheese on the bottom tortilla and fried the whole thing so the cheese would melt.  When they were done they looked like this:


Mmm!  Cheesy pumpkin!


These are some of the little pumpkin quesadillas that I made for my girls.  We topped them with lettuce, sour cream, and tomatoes.  We ate them like a tostada.  They had a nice crunch to them.
