Onion Roasted Potatoes

We had some potatoes that were about to hit their stride and I needed a quick and tasty recipe.  Potatoes are good pretty much any way you make them, but check this out:


YUM!  These are the onion roasted potatoes I made from this site I found on Pinterest.  They were pretty tasty and super easy to make.  Both of my girls even ate them (which is a big deal around here).  Give them a try.  If you love onions and potatoes you'll love this recipe.

Onion Roasted Potatoes (serves 6, approx. 4 oz each)
2 lbs potatoes
1 (1 oz) package dry onion soup mix
2 T olive oil

Preheat oven to 450 degrees.  Wash and dry the potatoes, then cut into chunks.  Place the potatoes into a 9 x 13 inch baking dish.  Pour the olive oil on top of the potatoes and stir to coat evenly.  Sprinkle the onion soup mix on top and stir to coat the potatoes.  Bake for 40 min. or until tender and golden brown, stirring occasionally.  If they start to get too brown before they're tender, you can lay a piece of foil across the top of the dish.
