Chubby Hubby Truffles - Pinterest Success



I am pretty skeptical when it comes to trying recipes on Pinterest.  However, I came across the recipe for these Chubby Hubby Truffles and just had to give them a try.  I mean, they have chocolate, peanut butter, and pretzels.  How could I go wrong?

Chubby Hubby Buckeye Truffles
(Recipe from the Brown Eyed Baker):
Yield: about 18 truffles
Prep Time: 20 Minutes
Chill Time: 1 hour, total

1 1/2 c pretzel pieces
1/2 c creamy peanut butter
1 T unsalted butter at room temperature
2 T light brown sugar
Pinch of salt
3 T powdered sugar
1 c milk or semisweet chocolate chips
1 T vegetable shortening

Put the pretzel pieces in a resealable plastic bag and crush into very small bits.  In a small bowl combine peanut butter, butter, brown sugar, and salt.  Stir until all of the ingredients are completely blended and smooth.  Add the pretzel bits to the peanut butter mixture and mix thoroughly.  Add the powdered sugar and mix until completely combined.  Line a small baking sheet with wax paper.  Using a small cookie scoop, or about 2 t worth of peanut butter mixture, gently shape into balls with your fingertips.  Place the ball on the wax paper-lined cookie sheet and repeat with remaining peanut butter mixture.  Place the baking sheet into the refrigerator and chill for at least 30 minutes.

When ready to dip the truffles, microwave the chocolate chips and shortening together in a small bowl at 50 percent power in 30 second increments, stirring after each, until completely melted and smooth.  Working one at a time, dip one peanut butter-pretzel ball into the melted chocolate and use a fork to roll it around, ensuring that it is completely coated in chocolate.  Let any extra chocolate drip off and place back on wax-lined cookie sheet.  Repeat with all the peanut butter-pretzel balls.  Return baking sheet to the refrigerator and chill again for 30 minutes.  Garnish with a drizzle of melted peanut butter and pretzel bits if desired.  Store in an airtight container in the refrigerator.


These were super yummy.  My little brother downed 4 of them in 5 minutes.  No joke!

Just a tip, don't make them too big.  They are plenty sweet and if you make them about 1 T (like yours truly) it is an awful lot of sugar in one bite.  But hey, maybe you like it that way.

    1. You're pretty lucky. I've had a few that were...let's just say less than desirable. But I always seem to have success with the desserts. Hmm...interesting.
