St. Patrick's Day is a time where you can dye all of your food green and get away with it. (The only other time I can possibly think of is if you are celebrating Dr. Seuss and eating green eggs and ham.)
Pinterest is a great source of inspiration. I found a pin that showed me how to make green noodles and knew that I must try it out. (Unfortunately, the link for the green noodles turned out to be spam, but the description explained how to do it.)
All you have to do is put food coloring in your water before you cook your noodles. Lo and behold they will turn green! I usually use fettuccine noodles for my alfredo, but I wanted to make sure the noodles really turned green. Worked like a charm!

We had salad, green alfredo, and St. Patrick's Day Sprite for a drink. I also like to add chicken or broccoli (or both) to the noodles.
The alfredo was a big hit with the kids. (High five to me!)
St. Patrick's Day Alfredo
(Adapted Recipe from Mom Bragg)
3 oz cream cheese
3/4 c Parmesan cheese
1/2 c margarine
1/2 c milk
8 oz fettuccine noodles (or spaghetti noodles); cooked in water, dyed green, and drained
1/4 c sour cream
In a large saucepan combine cream cheese and margarine cooking over low heat until melted. Add Parmesan cheese, milk, and sour cream. Stir till well blended and creamy. Add to noodles. (Optional: add steamed veggies or chicken.)
