We had lots of fun eating like bunnies. On the menu: carrot soup and bunny greens (a.k.a. green salad). I used this Curried Carrot Soup recipe. The recipe is at the bottom of this post.
I sauteed the onions, poured in the stock, carrots, and curry and cooked on the stove until the carrots were soft.
Then I poured my soup into a blender until nice and smooth.
And there you have it. It was a super easy recipe. You could add more water to if you like a thinner soup, but we liked that it was nice and hearty.
My kids sat at the table chanting, "Carrot soup! Carrot soup!"
They loved it!
We all agreed that bunnies have good taste.
Curried Carrot Soup
(Adapted from allrecipes.com)
2 T vegetable oil
1/2 onion, chopped
1 T curry powder
2 pounds carrots, chopped
4 chicken bouillon cubes
4 c water
2 c water, as needed
Heat oil in large pot over medium heat. Saute onion until tender and translucent. Stir in the curry powder. Add the chopped carrots and stir until the carrots are coated. Pour in the bouillon cubes and water. Simmer until the carrots are soft, about 20 minutes.
Transfer the carrots and broth to a blender and puree until smooth. Pour back into the pot and thin with water to your preferred consistency.
