Healthy Peanut Butter Bites


I am a sweet tooth--I mean a major sweet tooth.  When I'm "dieting" eating fruit to curb my sugar cravings doesn't always cut it.

As I browsed through recipes I had pinned on Pinterest, I found these little gems from Gimme Some Oven and knew I just had to try them.


Healthy Peanut Butter Bites
(Adapted from Gimme Some Oven)
Yield: 20-25, 1" balls

1 c old fashioned oats
2/3 c coconut flakes
1/2 c peanut butter
1/2 c wheat germ
1/2 c assorted chocolate chips (I used butterscotch, milk chocolate, and white chocolate.  These combined to equal 1/2 c)
1/3 c honey
1 t vanilla extract

Mix all ingredients together in a medium bowl.  Let chill in the refrigerator for an hour.  Roll into 1" balls.  Store in an airtight container.  Keep refrigerated for up to 1 week.


They were absolutely delicious!  My kids loved them.  All week they asked to have one of "mom's cookies."  The little kick of butterscotch was my favorite part.
